一.    OTSUMAMI(SMALL DISH INTRODUCTION)

Deep fried sea bream skin, salt & green tea & lime powder.

Grilled mackerel & Japanese pepper.

Roast heirloom tomato, smoked sea salt, pure sesame & nasturtium oil.

二.    SASHIMI (sliced raw fish)

Thinly sliced sea bream, white radish, wasabi, bonito soy.

三.    AGEMONO (deep fried dish)

Aubergine, broad bean & lotus root tenpura, ginger & mirin dip.

四.    YAKIMONO (grilled dish)

Char grilled wagyu steak, erungi mushrooms, rosemary & garlic oil.

五.    GOHANMONO (rice dish)

Seared sea bream nigiri sushi with smoked sea salt and lime.

Sweet soy glazed fresh water eel with fresh kinome.

六.    SHIRUMONO & TSUKEMONO (soup dish & pickles)

Barley miso soup with wakame seaweed & tofu, Selection of Japanese pickles.

七.    DEZATO (Dessert)

Strawberry, kaffir lime leaf and plum wine granita.
